Rasmalai (Sweet Milk Dessert)

Rasmalai is a delicious and popular milk based Pakistani/Indian dessert and is a very light one. Ras - means juicy & malai means - cream!! This dessert is sinful rich in its flavor & texture is a big hit in parties & festivals after main meals. It originated from kitchen of west Bengals. You will find a whole range of delicately balanced flavors waiting for you to surprise. Indeed an irresistible soft juicy sweet. Rasmalai is dumplings made from powdered milk soaked in sweetened thickened milk delicately flavored with cardamom & saffron & garnished with different dry fruits like almonds & pistachios.The spongy, fluffy and mildly sweet balls dunked in richness of milk are also of not much harm to dieters. I doubt no who will not like this heavenly dessert.

It is also served at weddings and other special occasions. It is best when served chilled. Though rich in favor and texture, it can be made at home easily!! They are way better in softness & healthier than the ready made ones lol, I have tried many combinations and this 1 is just PERFECT!! It was a treat to me lol. Go ahead & follow the following recipe to entertain ur guests for the next party on ur list! Its my all time favorite dessert. Here is the recipe:





Ingredients:

Dry Milk Powder (Nido Powder - Fortified)   1 cup (130 gm)
Eggs                                                                 1 - 2 at room temp.
Plain flour                                                        1 tsp
Baking powder                                                1 tsp.
Oil                                                                    2 tsp.


Rasmalai| Sweets| Nido powder| Pakistani Desserts




ONLY and only Oil is needed if dough is sticky and balls r not forming easily. NO water or milk.


Ingredients for Milk Syrup :


Milk                                                                   1 liter
Sugar                                                                 8-10 tbsp.
Green cardamom powder (Choti Ilaychi)         1/4 tsp.

For garnishing - Chopped Pistachio

Procedure:


In a bowl mix all the above mentioned ingredients and make about 15-20 small balls out of the dough. You can poke the balls in the center with a clean pin too to make sure the center doesn't remain hard. Note: If the dough is sticky while making balls dip ur fingertips in some oil to form the balls. And if the dough is too hard, add another egg gradually until the dough is soft (Medium).

On the other hand boil milk and sugar together. Add cardamom powder in it for a nice taste. Boil it until its half its quantity. U can add condensed milk too.

When the milk starts boiling, lower the heat. Pour the balls of rasmalai all together into the simmering milk, and cook for 10-15 minutes, keeping the lid covered. Keep checking them in between.

Don't pour them in to the boiling hot milk, otherwise the center will remain hard, and the outside will cook quickly. At the same point, if u don't add in the hot enough milk, they may fall apart. Turn them around by shaking the pot. 

Turn the heat off, and keep it covered for 5-10 minutes, for them to cook in steam. Check one by cutting it in center if its properly cooked or not. If not, u can keep it on heat for few more minutes until cooked :)

Note: Don't pour the balls one by one, pour them ALL in one go. Otherwise the time of cooking of all the balls will be different. 

And yooo.. Delicious Rasamalai is ready to be served..Decorate with crushed pistachios and serve chilled !! :)

Note: If the rasmalai doesn't turn out good, or properly cooked, don't worry, blend all the ingredients in a blender, chill it and have it as a drink or other wise freeze it and have it as an icecream/kulfi yummy!!

    1. No turn them after few minutes, until they become white like in the pic, if they r yellow it means they are not well cookd. Donot add water or milk. They come out great by practice :)

  4. Not every Indian Sweet Shop has Ras malai in their menu. I think It should be included in every shop of sweets as this sweet is liked by most of us. Thanks for sharing the recipe.

  5. At my home everybody are as obsessed as we all are here discussing for the Rasmalai. On a website named Living Foodz I got some amazing information and recipes for Rasmalai. I suggested it to my mother and she makes my days happier now.
