Fried Bitter Gourd with Potatoes - Punjabi Aaloo karelay

I just thought of sharing a veggie dish.. as I have been sharing enuf of sweets :P
 Bitter gourd - Karelay.. Don't be afraid of its name.. ppl mostly refrain from eating this veggie due to its bitter nature.. But I have introduced a method S5 - Scrape, Slice, Salt, Stand & Squeezeto reduce the bitterness of bitter gourd - karela..

Ingredients:

Bitter Gourd - Karelay                       1/4 kg
Potato                                               1 big
Oil                                                     1 wooden spoon (Doi)
Onions                                               2 medium sized
Tomato                                              2 medium sized
Green Chili                                         2 chopped
Garlic Paste                                        3/4 tsp.
Ginger Paste                                       3/4 tsp.
Red Chili powder                               3/4 tsp.           
Turmeric Powder                               1/2 tsp.
Black Pepper                                     ¼ tsp.
Salt                                                    3/4 tsp.
Cumin Seeds (Zeera)                          ½ tsp.
Coriander Powder                              3/4 tsp.
Lemon Juice                                       1/2 tbsp
Yogurt                                                1/2 cup





Procedure:

First of all I will let u knw some steps u should follow to reduce the bitterness of bitter gourd - karelas.

I call it 5S - Scrape, Slice, Salt, Stand & Squeeze :)

1.Scrape the rugged surface with the help of a peeler or knife into a smooth one :)

2. Slice the bitter gourd (karela) & remove the seeds from the center.

3. Rub bitter gourd (karelas) with lots of salt & set aside & let it stand for 30 min - 1 hour before cooking. Salt draws out the bitter juices from the slices. 

4. Next squeeze out the juice out of the bitter gourd/ karelas by pressing between the hands. Run under the water & squeeze out again.

Now the veggie is ready to be cooked :)

First of all, heat oil in a pan & deep fry the bitter gourd until golden brown :) Drain & set aside.

Next peel the potatoes and slice them in watever shape u want. I prefer french fries shape ;) Wash , drain & deep fry the potatoes. Yess! u will get chips yum yum! So, luks tempting naa? U wanna eat bitter gourd now? :P Lets move on to rest of the recipe :)

U can use the same oil for everything- frying karelas, potatoes & then making gravy :) Believe me the oil isn't bitter at all due to the 5S method we use :) 

So, heat oil in a pan, add the sliced onions until lightt brown. Add garlic, ginger paste, tomatoes, green chili and cook for few minutes until oil begins to separate from them. I prefer more masala in this veggie so used more onion & tomatoes preferably :) Then add rest spices & yogurt and fry for few more minutes. Next add fried bitter gourd & potatoes. Mix and keep the lid covered for 15-20 min. Add lemon juice. Garnish with chopped coriander leaves and serve hot with  chapati - rotis :)

    1. Hi Rashida! Can't stop laughing at this lol.. My hubby hates karela.. But its really difficult to decide what to cook daily.. so I managed to add diffrent things in it to make it eatable lol :P Thanx fr commenting!
