Russian Macaroni Salad/ Olivier Salad

Salads are of many types. Here is a healthy, nutritious n different from green salads. Olivier/ Russian Macaroni Salad... Olivier Salad is a traditional salad dish from Russia, which is also popular in Asian & sub continent countries! It is a seriously such a healthy salad that u would never regret making it. Takes bits extra time as compared to other salads as u have to boil eggs & potatoes & macaroni lol. This salad is dressed with mayonnaise, its special ingredient! Sorry diet conscious ppl! Of course its not for u!  :) The table looks so colorful & yuummyyy cox of this salad! The ingredients have been altered bit according to taste compared to the original recipe :P It can also be served as a complete meal itself! It looks creamy & refreshing salad! Here is its simple recipe :)





Serves: 3-4

Ingredients:

Boneless Chicken                               5-6 pc. (boiled, shred)
Carrot                                                1 (chopped finely)
Macaroni                                           1/2 cup (boiled)
Peas                                                  1/2 cup (boiled)
Egg                                                    1 (boiled and chopped)
Cabbage                                            1 small sized (chopped finely)
Tomato                                              1 medium sized (Diced)
Potatoes                                             1 medium sized (boiled,peeled
                                                           and chopped)
Pineapple/ Fruit cocktail                      1/2 cup
Capsicum                                           1 small (chopped)
Apple                                                 1 (cubed)
Kishmish (Raisins)                               Few
Corns                                                 1/2 cup (optional)            
Black Pepper                                     1/2 tsp.
Salt                                                     2 Pinches
Sugar                                                  2-3 tbsp.
Mayonnaise                                         5 tbsp. 
Cream                                                 5 tbsp.

Procedure:

Mix all the above ingredients and enjoy the nutritious salad :) You can add more things if u want any! Its easy!

  2. You can make this healthier by substituting mayo for olive oil. For more health and taste, use a fresh lemon or orange juice with just a touch of olive oil. And of course, no cream.

    Pasta made from quinoa or oats is another health boost. And better sweeteners would be stevia, local honey, pure maple syrup, or brown rice syrup. There are easy ways to make things healthier. ;)

    Capsicum: I'm assuming is cayenne or a hot pepper ?.

    1. Hey dear, thanx for ur suggestions. Everyone has different likings acc to regions and taste..As mentioned in the intro, I have already told that I have altered the original recipe, which is loved by most ppl here. Capsicum is a bell pepper and not hot pepper. U can google it for the pic, I haven't tried honey as a sweetener. will try some day. Ply refer to my section salads,as I have shared other salads too in which I have used olive oil which are a lighter version :) Enjoy
