Coconut Cupcakes

Hope ur eid is going great. Today is 3rd day of eid & enough of meaty dishes so I thought of sharing some delicious coconut cupcakes. Lets move onto the recipe :)

Ingredients:



Eggs                                                                3
Brown Sugar                                                   1/2 cup
Granulated Sugar                                            1/4 cup
Unsalted Butter                                               1/4 cup
Vegetable Oil                                                  1/4 cup
Coconut                                                           1/2 cup
Flour                                                                1 cup
Baking Powder                                                1 1/2 tsp
Milk                                                                 1/2 cup
Raisins                                                             1/4 cup
Almonds                                                          For garnishing
Sprinkles                                                          For garnishing


Procedure:


First of all bring all ur ingredients to room temperature. Cold things makes ur cake/cup cakes hard.

Preheat your oven to 180 C for about 10-15 minutes. Next, combine flour and baking powder in a clean dry bowl and set aside.

Mix butter,oil first & beat in another separate larger bowl. Next add brown & granulated white sugar & mix.

Beat the batter until fluffy and smooth. Remember not to leave chunks in it.

                                                        Then add eggs in it one by one.

                                                          Beat again properly.

Beat it again until soft, creamy and fluffy. Next add flour, vanilla eassence and milk in the above (egg) mixture. Combine all things and remember not to over mix or it will ruin ur cake. Mix simply by a spoon. Scrap all sides of bowl. Next add the desiccated coconut. Mix :)

Now grease the cupcake pan and pour the batter in it. Place butter papers in the cupacakes pan, so that the cake doesn't stick to pan while removing and maintain its shape.  Bake in the pre-heated oven for 10-15 minutes. Poke by a knife or tooth pick to see if the cup cakes are done.

You can top your cup cakes with cream, coconut powder and sprinkles or anything else you want :) You can top it with butter cream frosting of ur choice if u want.. Enjoy!!
