Spicy Samosa Chaat
This is one of my favorite Ramadan recipes. It consists of 5 main things, which are not at all time taking and hence may not affect your prayers. It has fried samosas, spiced yogurt, boiled potatoes & chickpeas, chopped tomatoes & onions & Phulkia (fried dumplings)!! You can boil chickpeas even a month before. Potatoes can also be boiled 2-3 days ahead. Phulkia can also be fried in an airtight jar even a month before. And soaked in warm water for few minutes before use.

Chicken Cutlets - Kebab
These easyyy chicken cutlets turned out extremely yummy!! Believe meee.. :)
Ingredients:
Chicken (Boneless) 1/2 kg (Boiled, shred)
Yellow lentils (Chanay ki daal ) 1/3 cup (soaked in water for 2-3 hrs, washed & boiled)
Potatoes 1 boiled, mashed
Onions 1 big (chopped)

Green Chili 3 (chopped)
Red Chili powder 1 tsp.
Garlic Ginger Paste 2 tsp.
Salt 1 tsp.
Cumin Powder (Zeera) 1 tsp.
Whole Spices Powder(Garam Masala) 1 tsp.
Coriander Leaves 2 tbsp.
Lemon Juice 2 tbsp.
Gram flour (Besan) 2 tbsp.
Egg 1/2
Oil For frying
Egg For frying
Coriander Leaves 2 tbsp.
Lemon Juice 2 tbsp.
Gram flour (Besan) 2 tbsp.
Egg 1/2
Oil For frying

Procedure:
Put all the ingredients in a bowl and mix properly. U can use a hand grinder (Kootni) to mash everything properly :)
Take mixture on the palm and make 20-25 small circle shaped kebabs and freeze.
Shallow fry them later until golden brown by dipping in beaten egg and bread crumbs; if u like and serve hot :) Enjoyy!
Note: Its better to use them in a day or two. As potatoes shoudn't be frozen for long!

Onion & Potato fritters (Pakoray)
Gram flour recipes are very popular in Asian countries. Yet the origin is Utar pardesh. I have noticed people from some countries don't know about what a gram flour is. My dear sweeties, It is a flour which is made from ground chick peas :)
Pakora is basically a mixture of some vegetables mixed in gram flour (Baysin in urdu) and deeply fried. Mostly I love to have it on a rainy day with hot tea/coffee <3 Sorry diet watcherss... :P They are crispy yet softt... I know u ppl are drooling out there :P No one can say NO to them..
Before I have introduced u to simple Pakoras and Veggie Pakoras. Here is another variety I have discussed :) Hope u will love them. <3 They are just sooo simple. Hope u will enjoy!! Here is the recipe:

Garlic Paste 1/2 tsp.
Cumin powder 2 tsp.
Potatoes 3-4 (peeled, sliced)

Coriander seeds (dhanyia) 2 tsp.
Pomegranate seeds (Anaar Dana) 1 tsp.
Red chili flakes 1/2 tsp.
Gram flour (Baysan) 8-9 tbsp.
Water 1/2 cup
Oil For frying Pomegranate seeds (Anaar Dana) 1 tsp.
Red chili flakes 1/2 tsp.
Gram flour (Baysan) 8-9 tbsp.
Water 1/2 cup
Procedure:
First of all, Cut thin slices of onion & potatoes.
Mix all of the above ingredients and add water gradually to make a semi thick paste. Maker sure it should not be too thin or too thick. Next add onion, potato slices and green chilies.
Heat oil on medium heat and pour slices of onions, potatoes and green chilies into the oil with hand or a tablespoon. Let them turn into golden brown.
Stir & turn them around gradually and take them out when they turn golden brown.
Make sure oil is not too hot, otherwise potatoes will remain raw and all efforts in vain.
Drain on tissue or a paper and serve hot with any chutney/ ketchup <3 :)

Chowmein are stir- fried noodles, the name being an English language corruption of the Chinese Chao mian.. The dish is most popular in Chinese Cuisine, but its variation have been developed all over the world, acc to preferences and taste of respective people. Although it is particularly popular in US and Britannia. They are versatile and there are so many ways to prepare them, stir fry, pan fry, steamed, dry etc.

Mayo Kebab Sandwich
Home made sandwiches esp. which can also be made by ur kids are one of the most wanted recipes :P
Sandwiches are a simple and delicious way to make a meal! Best used as an appetizer & snack or even a simple, quick & easy breakfast, to have with tea. They are a light meal. Sandwich is basically a food item composed of 2 or more slices of bread with one or more fillings in between them. These are unanimously popular type of food used in lunch boxes. And can be taken to school, offices & work. They usually consist of a combination of salad vegetables, meat, cheese, sauces etc. You can also use the bread itslef or it can be coated with different things to enhance its flavor & texture. They are of different varieties, like cheese sandwiches, chicken tikka sandwiches, club sandwiches, etc.

Orange Cake
Today I am going to discuss with u rather a simpler variety - Orange cake. Orange cake is one of the favorite cakes of mine. The natural orange taste in it makes it really special. Although old fashioned but still its best to have as a snack. It has more of a texture of a pound cake. Rich, moist and incredibly mouth-watering light fluffy dessert, which I love to bake. It has light yellow color due to the fresh orange juice added in it. This citrusy cake brings warmth and flavor to its utmost. This was one of the easiest & best cakes u can have which is extremely soft and have a powerful flavor of orange. The timing is really tricky while u r planning to bake a cake. Always remember to use ingredients at room temperature and do not over-mix + over-bake it. This might result in a dry & messy cake. Follow the instructions word to word and you will find yourself on the perfect side in baking a cake.
This is a strictly NO vanilla extract recipe. Why waste the taste of fresh oranges?
To bake a cake at home is not a difficult task! Here is an easy recipe. Don't think! Just get up to try :)

Classic Lasagna
Typical lavish & tempting Lasagna, is a traditional dish, filled with minced meat, white sauce & loads of cheese, that appeals to people of every age. It is simply outstanding & marvelous.
Lasagnae are a large, flat pasta like & perhaps one of the oldest types of pasta. They originated in Italy. The word also refers to a dish prepared with numerous layers of lasagnae sheets alternated with sauces & a variety of other ingredients.
Lasagna has been my cold weather favorite recipe! Ah! Home made lasagna. Can anything else be better than this? yumm... Its scrumptious layers of cheesy goodness always warm me up in cold rainy nights!! This dish is simple enough to impress ur family and of course friends in any party. Lasagna sheets piled huge, towering & layered full cheese to go along with the perfect mingle of meaty & zesty & ketchup/tomato pasta sauce.

Home Made Bread Crumbs
Wondering how to use the leftover, or few days old bread? Its just soo simple n easy!! Make bread crumbs :) Bread crumbs are dry bread that has been grated and finely ground. It can be made with the crust or whole bread can also be used. They can although be made by fresh bread too :)
In ready made bread crumbs, they may use emulsifiers, colors or treatment agents (which I usually avoid as nothing beats home made). Bread crumbs can be used to coat snacks, like kebabs or coat chicken or fish while frying to give it a crispier taste. I usually make large amount of bread crumbs every several months. Half kg of bread will give almost 3 cups of bread crumbs.
Here is how to make bread crumbs at home. Its so simple, that I feel odd explaining it to u, but still :P

Leftover Bread slices/Crust
Salt - Pinch
Procedure:
-First of all cut the crusts of the bread if u wish to use the crusts only. Or cut the bread slices into small cubes if u r using whole bread, because it will give a more even result. I have used the leftover crusts of the sandwiches.
Next place them in a bowl/plate and dry them in microwave oven for 2-3 minutes.
All the moisture will be finished. Allow the crusts to cool completely. Next add the dried crusts & salt into the food processor & pulse until the crumbs are finely processed. Bread crumbs are readddyy!!
Note: Make sure the crumbs are dry before storing them.
-Store the crumbs in an air tight container & refrigerate.

Chick peas 2 (Chana Chaat)
Before I have discussed a recipe of simple chick pea chaat.. without the use of any oil. Here is a bit different recipe :) Chick peas are high in protein and fiber. This chaat is mostly cooked in Ramadan in Pak and mostly I love to have it with Daahi Baray.. In this recipe, masala has been made first and then the chick peas are mixed.. slurrrppp :P Lets move on to the recipe:

Chickpeas (sufaid chanay) 1 cup boiled
Boiled potatoes 2
Oil 1 wooden spoon (doi)
Onions 1 big (sliced)
Tomato 1 (chopped)
Green Chili 2 (chopped)
Red Chili powder 1 tsp.
Turmeric Powder 1/4 tsp.
Black Pepper ½ tsp.
Garam Masala 1/2 tsp.
Chaat masala 1 tsp
Red Chili Flakes 1/2 tsp
Garlic Paste 1/2 tsp.
Ginger Paste 1/2 tsp.
Salt 1 tsp.
Cumin Powder (Zeera) 1 tsp.
Coriander Powder 1 tsp.
Coriander Leaves (dhanyia) Few
Maythi (Fenugreek) Seeds Few
Lemon Juice 1 tsp.
Vinegar Few drops (optional)
Lemon Juice 1 tsp.
Vinegar Few drops (optional)
Procedure:
Heat oil, and add the fenugreek seeds, followed by the chopped onions. Fry until onions are golden brown. Then add garlic and ginger paste, green chilies and the chopped tomatoes, followed by all other spices and chickpeas. Mix cubed boiled potatoes in it. Fry this for few minutes.
Then add vinegar. Keep the lid covered for 10-15 minutes on medium heat. Add lemon juice. Garnish with garam masala and chopped coriander leaves. And chana chaat is ready! I mostly Serve them with gram flour fritters - dahi baray :)
