Mexicali Chicken

Mexicali chicken is one of the dishes I learnt from Chef Zakir. Its a different chicken and beans recipe! Lets see how the recipe goes:

Chicken                                            250 gm (1/4 kg) cut into strips -( Appox 2 breasts )
Oil                                                    3-4 tbsp.
Onions                                              1 medium (sliced)
Green Chili                                        3 (chopped)
Tomatoes                                           3-4 big chopped
Tomato paste                                     2 tbsp
Black Pepper crushed                       1/2 tsp.
Red Chili Flakes                               1 - 2 tsp
Garlic Cloves                                    4
Salt                                                   1 tsp.
Coriander powder                             1 tsp.
Coriander Leaves (dhanyia)             1/2 bunch
Red kidney beans                             1 cup boiled

Heat oil, and add the chopped garlic followed by onions. Fry them for few minutes. Don't turn them into golden brown. Let them remain translucent.

Next add chicken cut into strips & fry until chicken changes color.

Then add the skinless chopped tomato, tomato paste, chopped green chili & all the spices. Fry for few minutes. Next add the boiled red kidney beans and cook on medium heat for 10-15 minutes. Cook until the chicken is well cooked & oil separates.

In the end add coriander leaves. Cook for a minute or so.

Delicious Mexicali chicken is ready!! Enjoyyy with naan or chapati or boil rice! :)
