Dulche De Leche Bundt Cake (Guest Post by Rafeeda)

Hello and salam my dear friends!! Today I am going to share with u a Guest Post by my sweetest lovely friend RafeedaShe is currently blogging on The Big Sweet Tooth. It is one of the lovely friendships I have received through blogging. She recently went to Saudia for Umrah. Its one of her blogs that truly impressed me, when I started blogging.. as she mostly shares few words related to our religion too in her most posts. It is always a pleasure to be writing guest posts to my fellow bloggers. In fact, I love the idea of guest posting as it improves virtual relationships between bloggers and makes it a place for some friendly competition and co-existence. I would like to thank Haffa for considering me to be a part of her little lovely blog!

Starting with an introduction, my name is Rafeeda and I blog at “The Big Sweet Tooth”. A working mother of two little girls, a Keralite Indian by heart but UAE-ian by growth, I take to cooking as a perfect stress buster from my otherwise packed life schedule. True to my name, I love sweets of all kind and could indulge in them without much control, however am forced to control my intake to ensure that I do not add more onto what I already have! 

Even though Haffa’s blog is quite young, I love the variety of recipes that she has on her blog. I am a big fan of Pakistani food and love to eat them whenever we are out. I have already bookmarked some recipes to try when I get the chance to, like Sooji Ka Halwa and Chapli Kebabs. I sincerely wish Haffa many many more months and years of successful blogging ahead…

After quite a thought, I decided to share this awesome cake that I had prepared as a “thank you” gesture to my elder daughter, Rasha’s friend’s mom, who used to take care of the kids in the absence of my umma. Since I wanted to make something that she would have never tasted before, I went for this cake, which is so caramelly in taste because of the dulche de leche (DDL). DDL is nothing but milk caramel which is used in cooking especially in South American countries. Had I not been blogging, I would have never got introduced to this delicious ingredient which can take your dessert to the next level. I have already made Mexican Flan, Banoffee Pie and DDL Icecream with this wonderful product. I sent half the cake for her, bought a few slices for my colleagues who absolutely loved it and the rest little piece was eaten up by the kids, my B and HD – not even sparing a single piece for me!!! Hmm… Off to the recipe…

Onion & Potato fritters (Pakoray)

Gram flour recipes are very popular in Asian countries. Yet the origin is Utar pardesh. I have noticed people from some countries don't know about what a gram flour is. My dear sweeties, It is a flour which is made from ground chick peas :) 

Pakora is basically a mixture of some vegetables mixed in gram flour (Baysin in urdu) and deeply fried. Mostly I love to have it on a rainy day with hot tea/coffee <3 Sorry diet watcherss... :P They are crispy yet softt... I know u ppl are drooling out there :P  No one can say NO to them..

Before I have introduced u to simple Pakoras and Veggie Pakoras. Here is another variety I have discussed :) Hope u will love them. <3 They are just sooo simple. Hope u will enjoy!! Here is the recipe:

 Ingredients:

Onion                                                 3-4 sliced finely
Potatoes                                             3-4 (peeled, sliced)
Black pepper                                      1/2 tsp.
Salt                                                     1 tsp.
Red chili powder                                2 tsp.
Green Chili                                         5-6 whole
Garlic Paste                                         1/2 tsp.
Cumin powder                                    2 tsp.
Coriander seeds (dhanyia)                   2 tsp.
Pomegranate seeds (Anaar Dana)        1 tsp.
Red chili flakes                                    1/2 tsp.
Gram flour (Baysan)                             8-9 tbsp.
Water                                                  1/2 cup
Oil                                                       For frying

Procedure:

First of all, Cut thin slices of onion & potatoes.

Mix all of the above ingredients and add water gradually to make a semi thick paste. Maker sure it should not be too thin or too thick. Next add onion, potato slices and green chilies.

Heat oil on medium heat and pour slices of onions, potatoes and green chilies into the oil with hand or a tablespoon. Let them turn into golden brown.

Stir & turn them around gradually and take them out when they turn golden brown.

Make sure oil is not too hot, otherwise potatoes will remain raw and all efforts in vain.

Drain on tissue or a paper and serve hot with any chutney/ ketchup <3 :)

Egg in the basket

Eggs are those meals that one can have in any possible way, it may be sweet or savory. And there is no certain time or occasion to have it, whether it be breakfast; (Omelettes, half fry, hosh posh, scrambled eggs, boiled eggs etc). Or lunch, supper, or dinner like Egg curry, Egg Fried rice, different variety of salads or in desserts like cakes, cookies etc. They are one of the commonly eaten food groups in this huge world. Eggs are truly rich in protein & calcium. Hence way healthy, delicious & nutritious than anything else especially for breakfast.

Today I am going to discuss with u how to half fry an egg in a hole of a bread! Egg in a basket - Egg in a hole - and also known by many other names is actually an egg half fried in a hole of a slice of bread. Some other names are:

Toad in the hole (eee)
Egg basket
Bird's nest egg
Pop eyes
Egg toast
Chicken in a basket etc etc :P

The dish is typically to crack an egg in the center of the bread and then fry it in butter or oil. Kids will certainly loveee it :)

Here is the recipe:





Ingredients:

Bread slice                                          1
Eggs                                                    1
Oil                                                        2 tsp
Salt                                                      To taste
Ground pepper                                    To taste

Procedure:

Cut about 2 inch hole in the center of the bread piece with the help of a glass or a cookie cutter and set aside.

Take a small skillet and heat it. Remember not to heat it tooo much or it will burn the bread before the egg is done :)

Next put the bread piece in the pan/skillet and toast it from one side. Next add the oil in the center of the bread and heat it for few seconds. Next crack an egg carefully in the center of the bread. And don't move the bread for at least 30 seconds. (Adding oil in the center will prevent the bread from absorbing too much oil, although for toasting u can spread a tsp of oil before).

Next after a minute or two flip the bread piece and cook for only 30 seconds.

Season with salt and pepper.

A delicious "Egg in the basket" is readyyyy..

Note: U can use different cookie cutters with shapes other than round.

Fish Shashlik Sticks

Shashlik (shashlyk) is actually a mongolian dish. Shashlik was originally marinated cubes of grilled lamb or beef, but people of different areas changed it depending on local, taste and religious preferences. It is also a form of Shish Kabab popular in India and other Asian countries.

It has high protein contents like meat and vegetables which make it even more healthier. And if grilled, it has very little fatthat is  in the form of oil.

Today I am going to alter bit of the original recipe, and use fish instead of beef. This recipe is just soo yumm n perfect that u will never regret making it. Extremely delicious and mouth drooling.

In this recipe, simply the boneless fish and veggies have been marinated and then shallow fried :) Perfect as a snack for winters

Note: Never marinate in an aluminium pot, because meat absorbs the aluminium oxide from the pot that can b toxic.
