Chickpeas Biryani

Chickpeas biryani used to be one of my favorite biryani my mom used to make. I seriously miss it :(


Ingredients:

Rice                                                    1 glass - 250 grams (soaked in water for 20-30 min)
Onions                                                1 big (sliced)
Tomato                                               2 (chopped)
Oil                                                       1 wooden spoon (doi)
Green Chilli                                         2 (chopped)
Red Chilli powder                               1 tsp.           
Turmeric Powder                                1 tsp.
Black Pepper                                       ½ tsp.
Red Chilli Flakes                                1/4 tsp
Garlic Paste                                        1/2 tsp.
Ginger Paste                                       1/2 tsp.
Salt                                                     Acc to taste
Cumin Powder (Zeera)                       1 tsp.
Coriander Powder                              1 tsp.
Black Pepper whole                            4-5
Cinnamon sticks (daar cheeni)            2-3
Clove (Long)                                       4-5      
Dried Plum (Aalo bukhara)                 3-4 (optional)
Boiled chickpeas                                 1 cup
Yogurt                                                 4 tbsp.
Orange food color                               Pinch in water




Procedure:

Heat oil, and add the chopped onions. Fry until onions are golden brown. 
Then add garlic and ginger paste, green chilies and the chopped tomatoes, followed by all other spices. Fry for few minutes. 
Add boiled chick peas. Fry this for few minutes. 
Add some water and then keep the lid covered until peas are well cooked and oil separates. Set aside.
On the other hand boil 10-12 glasses of water, add some oil (it helps rice not to stick together) and salt (acc to taste) and then add soaked rice. Wait until rice are about to boil (and not fully boiled). Drain.
In a greased pan, spread rice and then mixture of chickpeas layer by layer and sprinkle the color on top and keep the lid covered for 10 minutes. And chcikpeas biryani is readyyyyy!! yummyyy! Gently mix the rice and serve with raitasalad and Shami kabab :) Enjoyyyy... sssss... :P

Italian Rice

Italian rice are one of my favorite recipes. I learnt it from my sweet cousin Bushra =) Love u my sweet sis!
By the way, I am not sure whether Italy have such rice in their cuisine or not lol.. Still this is how it goes. Like some other recipes like Russian salad & Singaporean rice which don't exist in respective countries ;)

Today's post is a special post from a dear friend Kohilavani, who belongs to Malaysia..a friend through Facebook. She loves to cook & keeps on sharing great recipes. She also has tried many of my recipes like Almond cake, Scrambled eggs, Liver, Peas rice, Chicken Zinger, Gulab Jamun, Chickpeas rice, Mince Rice, etc etc :)

Wajik is a delicious sweet rice dish made using glutinous rice & dark brown palm sugar (brown sugar). It can be eaten as a tea time snack or normally made for Malaysian functions like weddings, engagements & Eid Mubarak.

Afghani Chicken Pulao| Kabuli Pulao


Afghani or Kabuli Pulao is a special rice dish of Afghan origin! Its just an awesome professional dish. Many members of my blog had asked me of this recipe. But I dedicate it to "Sadaf Imran" .. as she was the most beautiful lady who compelled me to make this :)
As rice is an all rounder savory dish, I also love to have it n cook it in a professional way hehe.
I searched too much for this recipe, and in this recipe, with the best proportions I got.
Everyone has its own way of making it. Traditionally it is made from lamb meat or mutton. But I made it using chicken =)
It is itself a complete meal :) A mixture of veggies, nuts & meat :) A low spicy version :)

Carrots are one of the healthy vegetables and can be served in variety of ways. Both as sweets & savory. It can be eaten both as raw or cooked. It is also well known among kids due to Big Bunny :P Carrots are also rich in anti-oxidant compounds. They are also especially beneficial for eye-sight.


Carrot Kheer is a traditional Pakistani/Indian dessert, made with milk, rice, sugar, dry fruits & saffron. In South India it is called as Payasam. This sweet dish is one of the easiest and quickest dessert. It is one of the way to make ur kids eat vegetables :P What u have to do is to boil milk, add carrots and rice, and cook and cook and u r doneee!! It makes a healthy and delicious dessert because it contains milk & carrots rich in vitamins, minerals, proteins, calcium and many other nutrients. It is delectable, creamy dessert. It is essential dessert at many festivals. Kheer is derived from a word that means milk. This kheer is best enjoyed when served chilled.

Chicken Shashlik with Sauce (Skewered Chicken)

Shashlik (shashlyk) is basically a mongolian dish. Shashlik was originally marinated cubes of grilled lamb or beef, but people of different areas changed it depending on local and religious preferences. It is also a form of Shish Kabab popular in India and other Asian countries.

It has high protein contents like meat and vegetables which make it more healthier. And if grilled, it has very little fat in the form of oil.

It has been estimated that world's half population live wholly or partially on rice, where 90% of the world's crop is grown & used in Asia. It can be used to cook both as Savory & Sweet. Some of the dishes that are made of rice, and I have discussed are:



Biryani is a dish in which rice are half boiled separately and curry is cooked separately and then put in layers and cooked on dum (Slow process of cooking over a very slow flame). There are many types of biryani like, Vegetable, chicken, mutton, Hyderabadi, mughlai, fish biryani etc.

It is one of the best savory dishes in my kitchen, esp when feeling like eating something different from the normal routine meal etc. It's a complete balanced dish that can be eaten alone or accompanied with raita. It is a versatile dish that can give way to a lot of space for your own innovation. There is no fixed rule to prepare this dish. You can use as many vegetables u wish, either one or more. Spices can be adjusted acc to your taste. This dish is truly a wonder dish with the natural earthy flavors of vegetables that makes the dish wonderful & luscious. Here goes its recipe:
