Salam, I am Ainy from over at AINYCOOKS where i share my passion of cooking, creativity and adventurous experiences of my life. It was both an honor and a thrilling experience for me when Hafsah asked me to write a guest post for her, She is not only a lovely new friend of mine but also one of the most ambitious and enthusiastic bloggers I know and puts a lot of effort into her blog and recipes...
It was very hard to select a recipe for her blog , I wanted something I thought she and her readers may like and that somehow fits into her repertoire. So i have selected a very easy but delicious cupcakes recipe .I love to make cupcakes and this recipe is a little bit different from my other cupcake recipes.
Ingredients:
Butter 125g/4 oz
Caster sugar 125g/4oz
Caster sugar 125g/4oz
Plain flour 100g/3 1/2 oz
Cocoa 1 oz
Baking powder 1/2 tsp
Milk 2 tbsp
Strawberry jelly 1 packet
Ingredients for Icing:
Single cream 100 ml
Golden syrup 1 tbsp
Dark chocolate or milk chocolate 100 g
Procedure:
- Preheat oven to 190c.
- Beat butter and sugar until pale and fluffy.
- Whisk in eggs until combined.
- Fold in sifted flour ,cocoa and baking powder. Add enough milk to make a smooth, dropping consistency.
- Spoon into the paper cases and bake for 20 minutes until risen and springy to touch.
- Prepare jelly in 1 cup of water and make small holes with any stick or clean thin pen.
- Pour hot jelly in these pores and let it set for few minutes.
- Make icing by melting cream, chocolate and syrup in a pan on gentle heat.
- Leave to cool and thicken until spreadable.
- Spread over the cakes and set aside.
- Dust icing sugar and decorate with strawberries.
