Singaporean Rice/ Casserole

There are many things in life which are illogical and doesn't relate to anything. One such thing is Singaporean rice :P Although, no such thing as Singaporean rice exist in Singapore itself, but still its called Singaporean rice in Pakistan lol :P


This is one of my favorite pasta & rice dishes <3 This spicy yet exotically appealing dish is made by layering  rice, spaghetti, mayonnaise sauce, chicken (cooked with different veggies). It is just irresistible and mouth drooling dish!! uff... This recipe takes quite a bit of time for preparing, but in the end when u are done u will be more than happy.. cox It's totally worth giving a try. Every bite of it u will be in air (not cox its thattt spicy, but because, it's tooo delicious :P ) :D


Let's move on to its detail and step by step recipe:





Servings: 5 - 6

Ingredients for Rice:

Rice                                                   250 gm - 1 cup rice
Salt                                                    To taste
Oil                                                     2 tbsp
Cumin seeds                                      1 tbsp (optional)


Ingredients for Spaghetti:

Spaghetti                                           1/2 packet (200 grams)



Ingredients for Mayonnaise Sauce:

Mayonnaise                                        1/2 cup
Ketchup                                              3-4 tbsp.
Salt                                                     Pinch
Garlic Paste                                        Pinch
Red chili                                             3/4 tsp. 
Black Pepper                                      1/4 tsp.

Note: If u don't like raw taste of raw red chili, replace it with 1 tbsp. of chili sauce.

Ingredients for Chicken & Veggies Gravy:



Chicken (boneless)                          500 gm (1/2 kg) 
Oil                                                    1 wooden spoon (doi)
Garlic Ginger Paste                          1 inch chopped
Ketchup                                            1 tbsp
Onions                                              1 big (cubed)
Cabbage                                            1/4 (Chopped)
Spring onions                                    1 (Chopped)
Capsicum                                          1 (chopped finely)
Carrot                                                1 (chopped)
Red Chili powder                              1 tsp.  
Green Chili                                        2 (sliced) 
Black Pepper                                     1 tsp.
Soya sauce                                         1 tbsp.
Salt                                                     1- 1/2 tsp.    
Lemon Juice                                      1 tsp.
Corn flour                                          1 tbsp. dissolved in half cup water
Chopped coriander                            Few leaves

Procedure:




Procedure for Mayonnaise Sauce:

First of all prepare the Mayonnaise sauce. Just mix all the ingredients mentioned above & set aside. :)

P.S. Adjust spices acc. to your taste!



Procedure for Spaghetti:

Next, in a pot boil water, add some oil (it helps spaghetti not to stick together) and salt (acc to taste) and then add spaghetti and boil. Drain. Wash with cold water to remove any extra stickiness. Then heat some oil and fry the boiled spaghetti in them for 2-3 min. Keep it covered.





Procedure for Chicken & Veggies Gravy:

Heat oil in a pan, and add the chopped onions. Fry until onions are translucent.



Then add ginger garlic paste, followed by chicken cubes. Fry until chicken changes the color into golden brown. Next add the chopped veggies (Carrots, cabbage, spring onions & capsicum). Stir fry for 10-12 minutes, until the chicken is almost done. 

  



Next add all the spices, coriander, chilies, lemon juice, sauces etc. and cook together for 2-3 minutes. Next add the cornflour mixed in water and keep stirring to avoid formation of lumps. Let it cook on low heat for few more minutes. You may alter the quantity of spices and thickness of gravy (I prefer little gravy for this recipe) acc to ur choice and turn off heat. I prefer bit more spicy!





Procedure for Rice:

On the other hand boil 10-12 glasses of water, add some oil (it helps rice not to stick together) and salt (acc to taste) and then add pre-soaked rice for 20 minutes. Wait until rice are about to boil (and not fully boiled). Drain. Put on steam/dum (in a covered pot) for 10 minutes. 






Now comes the Layering:

  • Take a dish and cover the bottom of the dish with rice.





  • Next add a layer of spaghetti over rice layer.








  • Next add mayonnaise sauce in the center of the dish.




  • Next pour the chicken gravy over the spaghetti all around the mayo sauce :)




  •  All done...... now serve hot..... n enjoy...... ufff yummyy!

Note: The above mentioned quantity of spices will result in a very spicy version of this dish. U can adjust the spices according to ur taste.

For the dish to serve warm, what u need to do is to first of all prepare the mayonnaise sauce. Then boil the spaghetti. Then prepare the chicken gravy and on the other side boil the rice. And when about to layer fry the noodles for a minute in 1 tbsp. oil, and do the layering. Instead, u can heat the dish in microwave too after assembling, though I prefer heating on stove and avoid microwave due to its hazardous waves ;) Enjoy!
