Chicken Corn Soup

Winters favorite starter of people all around the world is soup!! Today I'll share with you the recipe of Chicken Corn Soup!!


Serves: 2-3

Ingredients:

Chicken with bone                            100 gm (about 2-3 pc) or half cup boiled and shredded
Water                                                 4 cups or 2 cups stock
Garlic                                                1 clove
Green Chili                                       1
Salt                                                    1/4 tsp
Black Pepper                                     1/4 tsp
White Pepper                                     1/8 tsp
Chinese Salt                                       1/4 tsp
Eggs                                                   1 lightly beaten
Cornflour                                           1 tbsp. dissolved in some water
Carrot                                                 1 chopped finely
Spring Onion leaves                          1 chopped (optional)
Corn                                                   1/2 cup boiled, mashed lightly


Procedure:

Put the chicken, salt, Chinese salt, green chili, garlic, chopped carrot, black pepper, white pepper & 4 cups of water in a pot & let it boil on low to medium heat for 30-35 minutes. Until then chicken will be tender and u will be left behind with a nice amount of stock. Remove chicken pieces, garlic, carrot & green chili from the stock and keep them aside to let it cool a little. Or use 2-fork method to shred the chicken finely apart from bones. Discard green chili, garlic & carrot.

Next add the shredded chicken & boiled corn into the stock. Add the cornflour while stirring continuously and let the soup simmer on low- medium heat for 15-20 minutes, until it thickens. (You can increase the quantity of cornflour if you want more thickness)

Now add the lightly beaten egg and quickly stir with spoon to let it form threads as it cooks.

Let the soup remain on medium low heat for 5 more minutes & serve hot with spring onion & sauces!! And cream too if u love ;)
