Cake Rusks are a hard-dry sweet biscotti or a twice baked bread, shown in the pic below..
If u are a cake rusk & pineapple lover, u will love this dessert! I just love sweets!! I might live without sweets but my hubby is much more crazy for sweets than I am and This pudding just keeps our spirits high! :P so here is another recipe of a dessert which I got to know after my marriage, when I got into kitchen and this I first had at the famous bakery here in Pakistan i.e. gourmet, served in little cups. I was soo impressed but my curiousy went high to know what its ingredients were.. So, using my intellectuals, lol :P I tried this recipe. And Believe me it turned out soo yummy that I couldn't put my hands off. Sorry diet watchers!! But it exactly tasted like gourmet bakers. This pineapple and cake rusk delight is just an easy recipe to follow. Only 4 ingredients woww!! The crunchy cake rusks, pineapple-studded whipped cream are just soo marvelous. It is a perfect summer dessert, best served when chilled. This one is extremely easy to make, and requires no cooking. So, if you want to try out some new bakery style dessert for your weekend party, here goes the recipe: (you can serve them in little cups too)..
Cream 1 pack
Sugar 5-8 tbsp.
Cake rusks 10-15 crushed properly
Pineapple 1 small tin, fibers shredded
In a bowl whip 1 pack of cream, sugar and few tbsps of pineapple juice (optional) until fluffy and smooth. U can beat it with the help of hand if u don't have beater. (u can save 2 tbsps to spread its layer on top at the end for neatness.)
Next shred the fibers of pineapple pieces and add in whipped cream.
Next crush Cake rusks (Biscotti, easily available in markets) and add in whipped cream.

Finally, fold all of the above mentioned things into the cream gently. Spread the layer of cream on the top. Garnish with pineapple slices & wafers. Extremely delicious Cake rusk pudding/delight is ready. Chill for 2-3 hrs. Serve cold :) Believe me its just soo yummyy!!
Note: U can twist the recipe by replacing pineapple with fruit cocktail and instead of making Cake rusks crumbs.. enlayer them in a dish and pour the cream over it! YUM. Let it rest in fridge for hours n then serve!!
