Yogurt and Dumplings (Boondi Raita/ Dahi Phulkiyan)

Gram flour dumplings/ Boondi is a Rajhistani food snack made from fried chickpea flour. In Pakistan or North India boondi is used to prepare yogurt dip/raita. Boondi raita typically contains beaten curd (plain yogurt), boondi (which has been soaked in water to make it soft and then sieved) and of course the seasoning of salt, chili and other spices. It can even be eaten as a side dish with rice, palao or other dishes like chick peasss.. =) 

It is said that Punjabi cuisine includes a major part of milk products.. and it is sooo true, as m punjabi too :P Usually Punjabi's serve this with their everyday meal. Cool boondi raita gives such a soothing effect in hot scotching summer. 

Boondi / Dumplings are actually tiny cute balls made of gram flour/ besan. These boondi/phulkia/dumplings are easily available in market, n u just have to soak them before using. But I prefer making them on my own. 

Lets move on to the recipe :)

Boondi raita, Dahi Phulkia (Yoghurt gram flour dumplings) | Gram flour| Snacks | Ramadhan




Ingredients for Phulkia/ dumplings:

Black pepper                                      1/4 tsp.
Salt                                                     1/2 tsp.
Cumin seeds                                        1/2 tsp
Red chilli powder                                 1/4 tsp.
Gram flour (Baysan)                             1 cup
Water                                                  1/2 cup
Baking powder                                    1/4 tsp.
Oil                                                       For frying 



Dahi Phulkia (Yoghurt gram flour dumplings) | Gram flour| Snacks | Ramadhan
Procedure:

Mix all of the above ingredients and add water gradually to make a semi thick paste. Maker sure it should not be too thin or too thick. Next, heat oil on medium heat and once hot, hold perforated spoon (a big round spoon with multiple smalll holes in it) a little above the pan & pour a small scoop of batter on it. Spread the batter on spoon so that small droplets of it fall into the oil and get fried into boondi :) Repeat the process with rest of the batter. Stir them around gradually and take them out when they turn bright yellow color. Pour them directly into cold water and drain.


Ingredients for yoghurt:

Onion                                                 3-4 chopped finely
Yoghurt                                              1/2 kg whipped
Sugar                                                  2 tbsp
Salt                                                     1/4 tsp
Red chilli powder                                1/2 tsp.
Chaat Masala                                      1/2 tsp.
Green Chilli                                         1 chopped finely
Coriander Leaves                                A bunch, Chopped
Tomato                                               1 cubed
Cumin powder                                     1 tsp.
Ketchup                                              1 tbsp.




Procedure:

Mix all of the above ingredients in yoghurt  add gram flour dumplings, garnish with ketchup & coriander leaves & serve cold :) yummyyyy!

  4. can we store difrnt cutting vegetables in freezer to save the time for salads?
