This time I have come up with some cooking rather than baking. Some traditional Punjabi dish which is I am going to share and will try to elaborate each and every step. Very delicious, rich in proteins and simple to make: Lets head over to the ingredients and the procedure to be followed:
PUNJABI DAL MAKHANI (BUTTER LENTILS):
This meal is enough for 3 to 4 members of your family;
Ingredients you will need:
For Base
- 1/3 cup of Bengal Gram Split (Chana Dal)
- 1/3 cup of White Lentil (Mash Dal)
- 1/2 cup of Pink lentils (Masoor Dal)
- Salt to taste
- 1/2 tbsp red chili flakes
- 1/4 tsp of turmeric powder
- 1/4 tsp of Garam Masala
- 3 tbsp of Butter
- 1/2 cup of Cream
- 2 tbsp of tomato puree
- 1/2 cup of Chicken Stock (optional)
- Water as required
For tarka
- 1 tbsp of Oil
- 1/2 chopped medium sized onions
- 1 tsp garlic and ginger paste
- 1 tsp of cumin seeds (Zeera)
- 2 or 3 red chilli
- 2 or 3 green chilli
- Coriander for garnishing
Steps to be followed
Step 1:
Wash and soak the lentils for one or two hours. You can separately soak them, but it takes a lot of time, so I combined all lentils in a bowl.
Step 2 :
Normally I don't use Pressure cookers, but if I am making dal makhani, I prefer to use it. Pressure cooker the lentils at low heat with water as required for about 15 to 20 minutes. We want a perfect curry, so each lentil is to be combined nicely, giving a special taste and aroma. If not cooked properly, pressure cooker again for 1 or 2 more whistles.
Step 3 :
Next, Open the cooker, add tomato paste, cream, butter, salt, red chilli flakes, turmeric powder and garam masala. Cook more, until you get a creamy and a smooth consistency in curry. Transfer in a bowl and set aside.
Step 4:
In a separate pan, add all the ingredients required for tarka i have already mentioned, little sauté. Spread the tarka over the curry bowl. Garnish with coriander. Serve and enjoy ~
