Once upon a time in my life .. I used to use masala packets for biryani.. and loved them. Never thought of cooking without them. But after marriage I thought to go for the natural fresh flavor.. and now biryani has become one of my experties :)
Lets move on to the recipe:
Ingredients:
Rice 2 glass (soaked in water for 20-30 min)
Chicken 1/2 kg
Oil 2 wooden spoon (doi)
Onions 4 (sliced)
Onions 4 (sliced)
Garlic Paste 1 tbsp.
Ginger Paste 1 tbsp.
Tomato 4 (chopped)
Green Chilli 4 (chopped)
Red Chilli powder 2 tsp.
Turmeric Powder 1 tsp.
Salt 1 1/2 tsp.
Cumin Seeds (Zeera) 2 tsp.
Coriander Seeds 2 tsp.
Black Pepper whole 4-5
Cinnamon sticks (daar cheeni) 2-3
Clove (Long) 2
Cardamom pods 2
Green cardamom 1
Bay leaf 1
Lemon Juice 1 tbsp.

Lemon Juice 1 tbsp.
Dried Plum (Aalo bukhara) 3-4
Yogurt 3/4 cups
Orange color pinch in water
Coriander & Mint leaves Few
Coriander & Mint leaves Few
Procedure:
Heat oil, and add the chopped onions. Fry until onions are golden brown.
P.S. U can remove the fried onions and add them later on when the chicken is cooked. I prefer doing this cox I love the fried onions in biryani.
Then add garlic and ginger paste. Fry for few minutes. Next add green chilies and the chopped tomatoes. Fry and fry until tomatoes turn into a puree and leaves oil. Next add chicken. Fry for few minutes until chicken changes color. Add yogurt and all the spices and cook until chicken is well cooked and oil separates. Add plum and lemon juice at end. Set aside.
On the other hand boil 10-12 glasses of water, add some oil (it helps rice not to stick together) and salt (acc to taste) and then add the soaked rice. Wait until rice are about to boil (and not fully boiled). U can check a grain by pressing between ur fingers. When it breaks into 2-3 pcs. easily, drain the rice.
In a greased pan, spread rice and then chicken, mint and coriander leaves layer by layer and add the color on top and keep the lid covered for 10 minutes. And Chicken biryani is readyyyyy!! yummyyy! Gently mix the rice and serve with raita, salad and Shami kabab :) Enjoyyyy... sssss... :P
