Basella/ Mustard leaves - a really healthy, green n nutritious diet, famous in South Asia. I always thought it was really hard to cook!! But when i stepped into cooking, and learnt from my mom in law, I found it wasnt a big deal, u can say u have to boil it n grind it n thatsss it!! wooo!! Rich in Iron, these leafy veggie is just so gud to taste buds that one can't stop from having it. Slurppp.. Some people love to have it with makki chapati, made by corn's flour. Saag aalo is a famous dish in Punjabi cuisine in both India and Pakistan. Lets have a look :)
Ingredients:
Mustard leaf (Sarsoo ka saag) 1 kg
Spinach 1/4 kg
Spinach 1/4 kg
Green Chili 4
Red Chili powder 3 tsp.
Garlic 2 heads/bulb
Ginger Paste 2 tsp.
Salt 3 tsp.
Wheat flour 12 tbsp.
Wheat flour 12 tbsp.
For Tempering: (Tarka)
Oil/butter 2 wooden spoon
Onion 2 medium sized sliced
Onion 2 medium sized sliced
Garlic 15-20 cloves chopped

Procedure:
Chop mustard & spinach leaves into small pieces, appox 1/2 inch as shown in pic.
Soak them in water for 5-10 minutes & then drain & wash properly. Boil it in 2-3 cups of water until it is cooked properly after adding garlic, ginger paste, green chilies, salt and red chili powder. Keep on stirring it with wooden spoon properly at intervals. Then add the flour. Grind it properly with wooden spoon or in a processor.
Taste for salt. U can adjust it while seasoning if its not accurate.
For tempering (Bhagaar), heat oil and add the chopped onions & garlic. Fry until onions are golden brown.
Then add the grinded mustard leaves (saag). And cook for 5-10 minutes. Extremely nutritious Saag is ready :) Serve with butter.
