This is my favorite veggie, and today I am going to share with u healthy okra recipe. I am again on diet so u will see diet recipes now & then in the next few weeks. Here is its recipe :)
Bhindi (Lady Finger) ¼ kg
Olive Oil 4 tsp (Its actually 2 tsp/serving/day for ppl on diet)
Onions 1 big (chopped finely)
Tomato 2 (chopped)
Green Chili 2 (chopped)
Red Chili powder 1/2 tsp.
Turmeric Powder ¼ tsp.
Black Pepper 1/4 tsp.
Ginger Garlic Paste 1 tsp.
Salt ½ tsp.
Cumin Powder (Zeera) 1 tsp.
Coriander Powder 1 tsp.
Coriander Leaves (dhanyia) Few
Wash the Okra, and let it dry in a strainer. Slice of tops of Okra & ends (if u want, I personally luv the ends lol) & discard them. Chop them into 3/4".
Boil 1/4 cup water, and add the chopped onions. Let them boil until they are translucent.
Next add oil in a pan, heat it. Add boiled onions, followed by garlic and ginger paste & fry them for 2-3 minutes. They might not change color due to very less amount of oil used. Next add green chilies and the chopped tomatoes, followed by all other spices..
Add lady finger/bhindi, mix and keep the lid covered for 10-15 min until it is cooked. Add a little water too if there is none.
