Semolina Dessert (Sooji ka halwa)

Halwas are the special kind of desserts made traditionally with ghee (Clarified butter). The word Halwa has come from the Arab culture. There are variety of halwas in Pakistan, like Carrots halwa, Gram flour halwa,etc. 

Semolina Pudding (Sooji ka halwa) is especially famous in Pakistan & India at sundays with pooris for breakfast :) or on festivals/special occasions like Eid. It can also be used as a dessert! It tastes yumm :) It is called "Kesari" in Hindi. Its traditional recipe. Its so tasty n healthy when consumed in moderation. Its one of the best sweet dishes which u can offer to guests, in emergency. Cox the main ingredients required are semolina (Sooji) and water lol :D you can even give them to little babies in weaning age, but make sure to keep it bit liquid in consistency :)

It's really easy to cook, here is my mother in laws yummiest recipe :)




Serves: 5-6

Ingredients:

Fine Semolina (sooji)                           1 Cup
Sugar                                                    1 Cup
Butter                                                    4-5 tbsp.
Water                                                    2 cups
Crushed Nuts                                        Few
Choti Ilaychi (Green cardamom pods)    2    
Orange food color (Optional)

Procedure:

Take 1 cup of sugar & 1 cup of semolina - both equal in quantity (That's what I love about the recipe lol ).

Then add butter or oil in a pan & heat it along with green cardamom :)
P.S. Accurate recipe call for 1 cup butter/oil, but I prefer using less :)

Add semolina (Sooji) & start stirring continuously.

Stir & stir untill a nice aroma comes & it turns golden brown like this (Make sure not to burn it)

Add sugar & stir again

Meanwhile boil 2 cups of water & add the boiling water into the semolina (sooji). (If u want a colored dessert, add few drops od color in water at this time). Make sure not to spill over you. :) Add nuts.

Again start stririing it lol :P

Now add the raisins.

Cook for few minutes until water evaporates. You can cook acc to ur desire of how much consistency u want the halwa/pudding. :) And u r done. uff yummm!! I want it just nowwww,...

  4. We call it kesari in tamil nadu. We also call it thulli in urdu. Names may be several but the ingredients used and the final dish is the same. Yummy. Thanks for sharing.
